LOL...when I lived in Dallas there was a place we went to for lunch that served good brisket. I think it was a cafeteria style chain, but the name escapes me. It was really good, but where I grew up, "BBQ" was primarily pork and came (chopped or pulled) in the form of a sandwich, or as ribs...Anything else just wasn't "BBQ" ....lol..Is funny how different regions use different terms for the same things..ie.."soda", "pop"...in the South it is simply a "coke"...My friends in Dallas used to "BBQ a steak", I was like "Yuck, just GRILL mine medium-well"...lol Memphis BBQ is pretty good I just always have to remember to tell them to hold the slaw...they put slaw on their BBQ sandwiches here...bleck ...lol I don't care for the dry ribs they have here either..I think TX has dry rub BBQ too don't they? IMO BBQ should be tangy, smokey, slightly sweet and above all else...MESSY...lol

I grew up on pork in Arkansas-pulled and chopped. When our relatives have come to visit I said lets get BBQ and there like not really excited but after they ate it damn this is the best damn BBQ ever-licking there fingers like crazy. And the hot sausage is awesome also. Come to South Texas for some brisket that you wont forget.

In Texas when families and friends get together for BBQ, a lot of times the women are inside gabbing and doing whatever it is they do during these things, getting all the "fixins" ready. The men are all outside standing around the smoker (where the meat is), drinking beer, smokin' and tellin' lies. The party host (or smoker owner)-whatever- begins to cut little pieces off the brisket and hand them out to the beer drinkers. Of course the meat had been ready for a couple of hours before this begins, usually around 10AM. By 2 or 3 PM, when it's time to eat and the ladies holler for the meat, the host delivers up about 1.5 pounds of brisket and two ribs and goes and hide. All the men fall out pointed toward the TV and promptly let the digestive process take over (read fall asleep). Best fun I've ever had.
