If this was the first time the rears were turned then I would not be concerned.
It's usually best to make a minimal cut just to remove the existing glaze and transfer layer laid down by the previous pads. The new pads will seat better if this is done. Provided they made a minimal cut you're better off with known "true" rotors than take pot luck on new ones.
To be sure they didn't hog off too much material have them checked - the standard rear rotor thickness is 0.551 and minimum is 0.472 (12~14MM)
